We recommend consuming iceberg ice within 2 months of receipt so to ensure you are enjoying the purest product possible. Protect it from direct contact with other freezer items to prevent premature spoilage.
Our iceberg ice is best stored at temperatures between 0°F and −20°F. Temperatures colder than the recommended range are of no benefit and may in fact adversely affect the tempering process, described below.
Tempering is a transition period that allows the ice to acclimatize to a slightly higher temperature before use, so to help prevent it from cracking when enrobed in a warmer liquid. This process also allows the ice to shed any frost, and reveal it's true beauty and character. Tempering should take between 5 and 15 minutes, depending upon the surrounding room temperature.
